WHAT YOU'LL DO
Requirement
This position is mainly responsible for the management of a specific section/area in the Galley as designated by the Executive Chef, to prepare the food needed for daily service to guests and crew. As well will physically assist, back up and work the line as needed and required during all guest meal services
Responsibilities:
- All duties and responsibilities are to be performed in accordance with Anglo-Eastern Leisure Management pillars of Safety, Service and Style, ISM standards, USPH guidelines, environmental, and safety policies.
- Required to be involved with general cleaning of the galley, provision loading, help and support any area of the galley as needed, required and specified by the chef and/or other hotel/galley management.
- Practicing and following strict sanitation procedures and requirements, food handling procedures as set by Anglo-Eastern Leisure Management Vessel Sanitation Program based on USPH/CDC guidelines.
- All galley crew members are required to be in their assigned positions and productively working at the specific times set by the chef, that are conducive to the galley operation and general meal service.
- All galley crew members are expected to help and support any other area of the galley operations as required and/or instructed by the chef or other vessel management.
Specific to position Responsibilities:
- Works with line cooks assigned to this station to ensure that all foods prepared are in accordance with Anglo-Eastern Leisure Management corporate guidelines and menu cycle
- Responsible for maintaining respective Area, Walk In’s, Reach In fridges clean and general storage facilities, organized,
- Responsible for coordinating all essential duties related to the ordering for the daily operation, receiving and proper storing,
- Responsible for ensuring adherence of the company’s policies for the daily ordering,
- Responsible for maintaining proper on-hand inventory of all products following the company’s established par levels.
- Responsible for fulfilling all customer orders.
- Responsible for monitoring the shelf-live and expiration dates of all applicable items to avoid deterioration and waste and to maximize storing and space efficiencies.
- Maintains for him/her and his/her subordinates’ proper safety, hygiene and sanitation practices
- Assist Management with training and induction of all new crew members
- Report on work orders to the Sous Chef and practice preventive maintenance of galley equipment.
- Responsible for ensuring that the Assistant Cooks follow his/her schedule and perform the required tasks as per position’s job description.
- Assists the Hotel Controller with assigned duties required by the day-to-day operations of the inventory organization.
- Comply with all corporate standards and procedures as they relate to the entire Anglo-Eastern Leisure Management organization.
- Follow ships’ rules and regulations as stipulated in the employment agreement and respect all Senior Ranking Officers and fellow staff.
- Attend and participate in all mandatory lifeboat safety drills on embarkation days and any other port days as scheduled by the Master.
Skills, Experience and Qualifications:
- Minimum 2 ears' experience in CDP position on a cruise ship required
- Minimum 5 years in the profession onboard cruise ship or upscale/luxury hotel (4 or 5*)
- Proven ability to lead with the ability to motivate their team
- Good understanding of Public Health standards (USPH) related to the Galley Operation
- Fluency in conversational and written English
- Graduate of Culinary Arts from recognized institution preferred
- Must have solid international cuisine experience
- Basic computer skills
General Requirements:
- Must be at least 21 years of age
- High School Degree Required
- Reference check from previous employer
- Domestic Police Clearance
- Ability to perform the essential functions of the job as outlined in the respective job description.
- Ability to work and live in a structured vet multi-cultural, multi-ethnic environment
- Ability to apply common sense and to carry out instructions provided in written or oral form in English
- No visible tattoos when wearing short sleeved, shorts or skirts
- The onboard spoken and written language is English, all applicants are required to be able to read and interpret instructions and communicate information in fluent English
- All positions require successful completion of pre-employment physical and be physically fit to stand for at least 10 hours per day and be able to lift at least 50 lbs (~22 kgs) without assistance
